One of our favorite easy dinners is chicken and veggies! I'm pretty sure I've found a million different ways to cook chicken and veggies 😂 this one is a simple go-to.
All you need is a whole roaster chicken and some chopped carrots, potatoes and onions....toss the veggies with a little olive oil and garlic powder, season the chicken with season salt, and cook it all in a baking dish for about 1 hr 45 min to 2 hrs at 385 degrees Fahrenheit.
Tonight I got fancy and threw in a few cabbage quarters the last 10 minutes of baking. YUMMM.
