This delicious quesadilla is quick, easy, and delicious, a perfect recipe for lunch!!
Whole wheat tortillas (I only like the handmade kind!)
red peppers, diced
red onions, diced
left over chicken from whole cooked chicken
Side salad mix:
Roma tomato, diced
plain Greek yogurt, to taste
Tapatio hot sauce, to taste
1. Between two tortillas, add chese, peppers, onions, and chicken.
2. Cook on griddle for a few minutes on each side.
3. Serve with a salad and enjoy this healthy lunch!!
