It's a chicken taco soup kind of day!
I love chicken taco soup because it's easy to make in a hurry and really hard to mess up! I just used what we had in hand and it turned out A-MAZE-ING!
Chicken Taco Soup
-1 bag frozen chicken breasts, cooked and shredded (I use my kitchen aide mixer with the cookie attachment)
-1 quart salsa (we made canned homemade)
-32 oz chicken broth
-1 can tomato paste
-2-4 cups water (add one at a time)
-1 can diced tomatoes
-1 can black beans
-1 can pinto beans
-1 can kidney beans
-1 can corn
-1 red pepper
-1 green pepper
-1 large onion
-salt to taste
-Chulula and Tapatio to taste
Mix all ingredients in stock pot. Boil until onions are translucent.
Add greek yogurt, chips and cheese to top. Enjoy!
