Little B has been BEGGING for chocolate chip cookies all day. Since he hasn't had much of an appetite my mom guilt kicked in so I HAD to make him some...right?!
Problem is, I LOVE chocolate chip cookies. They are my WEAKNESS.
So I pulled out my trusty Betty Crocker cookbook and "cleaned up" a chocolate chip cookie recipe. And this scrump-diddly-umptious recipe is the result!
My advice? Space them farther apart than I did- or as Little B said, "it's a square cookie!"
Crunchy Mama Chocolate Chip Cookies
1/2 c coconut oil
3/4 c honey
1/2 tsp baking soda
1/4 tsp sea salt
1 tsp vanilla
1 c whole wheat flour
1/3 c oats
1/2 c unsweetened coconut
2 tbs chia seeds
1/2 c chopped walnuts
1/2 c dark chocolate
Mix all ingredients together. Drop TBS full of dough on greased cookie sheet and bake at 375 for about 8-10 minutes. Makes about 20 cookies.
Warning: they are more of a "cake-like" cookie. If you don't want that then omit an egg and add 1-2 tbs flour.
