Since we've been doing the Whole 30 I've had to get creative about getting in enough nutrients to keep up my milk supply. Before we started the Whole 30 I would eat cheese and Greek yogurt with nearly every meal 🙈 I'm pretty sure that's how my supply was sustained. But now that I cut out dairy I have to replace those fats.
Luckily I love coconut oil and use that liberally 😳 I also love avocados and my goal is to eat an avocado a day🥑. This is one of my FAVORITE ways to eat an avocado (besides slathered all over a pork burrito🌯😆)... Shakeology pudding!
Simple and YUMMY. The hardest part is waiting for it to set up in the fridge. And yes, I completely realize that part of the whole 30 is "not snacking" or having treats (and don't worry, I completely realize Shakeology is "technically not approved") but in order to keep my supply up I have to do what I have to do so, this is "my Whole 30". 🤗
Chocolate Shakeology Pudding
1½ scoops Chocolate Shakeology
1 ripe medium avocado
1 medium banana, cut into chunks
1 cup unsweetened almond or coconut milk
1 tsp fresh lemon juice
What You Do:
1. Place Shakeology, avocado, banana, milk, and lemon juice in blender; cover.
2. Blend until smooth. (If too thick add additional almond/coconut milk.)
3. Pour into four dessert cups; refrigerate for at least 1 hour, or until set.
