I'm totally the girl that doesn't follow the recipe and has to tweak and substitute...please tell me I'm not the only one?
This banana bread recipe is the result of 2 amazing recipes that were shared with me.
The result is AMAZING, DELICIOUS, and toddler and husband approved- win-win-WIN!
PALEO BANANA BREAD
2 ripe bananas, mashed (about 1 c.)
1/4 c. pure maple syrup or honey
1 tsp. pure vanilla extract
2 TBS coconut oil, melted
3/4 tsp. baking soda
1/4 tsp. pink Himalayan sea salt
1/4 c. coconut flour
3/4 c. almond flour
1/2 c. unsweetened coconut
1/2 c. chopped or processed walnuts
Heat oven to 350º. Combine wet ingredients in mixer, mix well. Combine dry ingredients in separate bowl, mix well. Add dry ingredients to wet ingredients and mix well.
Pour into greased or lined (I prefer lining--it makes for less disasters when trying to remove the loaf) 8" x 4" loaf pan and bake for 35-45 minutes.
