When I was little I remember waking up on Sunday mornings to the smell of pancakes and the sound of Christian music. Sunday was the only day my dad got to spend mornings with our family and he made it special by making us breakfast. "The lumpier the batter, the better." My dad would always say.
I love carrying on this tradition with my family.
Of course, I had to pull out my trusty Betty Crocker cookbook and clean up the pancake recipe. I added Greek yogurt and extra eggs to make it protein packed. I also mixed the white and wheat flour for some whole-grain's, but still made it tasty for the kiddos. Coconut oil is a yummy cooking oil sub and of course honey for the sweetener.
So easy to clean up favorite recipes and make them a tad bit better. And they still taste amazing, even BETTER-I would argue.
We discovered topping them with homemade strawberry jam for an extra treat. Another, cleaner alternative would be fresh or frozen strawberries, mixed with a bit of honey and cooked together on the stovetop. And of course pure maple syrup is always delicious.
Protein Pancakes-family style
1 c. White flour, unbleached
3/4 c. Whole wheat flour
2 TBS honey
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
1 c. Plain greek yogurt
1 c. Water
3 TBS coconut oil
1 tsp pure vanilla extract
Mix all ingredients together, and leave some lumps. Scoop batter on to preheated and greased griddle in 1/4 cup amounts. Flip, cook other side, top with your fave toppings and dig in.
