2 LBS. lean ground meat (I used elk)
1 large onion, chopped
2 large bell peppers, chopped
1 clove garlic, chopped
1 packet low-sodium taco seasoning (or use your own seasoning)
2 pint jars of homemade salsa
2 cans organic whole tomatoes, pureed
1-3 cups water
2 cups corn (I used fresh frozen)
2 cans pinto beans
Salt, pepper, cayenne to taste.
Brown meat with onions, peppers, and garlic in large pot. Add taco seasoning, salsa, pureed tomatoes, water, corn, and pinto beans. Stir and season to taste. Bring to a boil and let simmer for about 30 minutes.
