SKINNY MINI CAPRESE PIZZAS

Cook time: 20-25 minutes

Serving size: 2 pizzas (1 full English muffin)
Oven Roasted Tomatoes
olive oil flavored cooking spray
30 cherry tomatoes, halved
¼ tsp garlic powder
1 tsp fresh basil, chopped
6 light multi-grain English muffins
1½ cups oven roasted tomatoes
1-2 cups fresh baby spinach
¼ cup fresh basil, chopped
8 oz fresh mozzarella, sliced or chopped into small cubes
2 tsp balsamic vinegar
Oven Roasted Tomatoes:
Preheat oven to 400 degrees. Slice and spray tomatoes with nonstick spray and place in a ziplock plastic bag. Add the garlic powder and basil and shake the bag to mix.
Place tomatoes on a spray-coated baking sheet. Roast 5-10 minutes until skins begin to pop and wrinkle.
Split the English muffins and lie them open-face on a baking sheet.
Divide and place the spinach on each muffin and top with mozzarella and oven roasted tomatoes.
Bake for 10-12 minutes or until the cheese is melted.
Drizzle lightly with balsamic vinegar and sprinkle with basil before serving.
